- Yogurt layer - Use 100% Greek yogurt, or make a 50:50 mix of Greek yogurt and whipped cream. For a more decadent Spekulatius tiramisu, substitute the yogurt and mix the whipped cream with mascarpone in a 1:1 ratio.

Spekulatius Dessert Recipe Steps:
Step one: Prepare the Rote Grütze (Red Berry Compote):
In a saucepan, combine most of the mixed berries, sugar, vanilla extract (affiliate link), and water. Bring to a boil and simmer for approximately 5 minutes until the fruit starts to fall apart. Meanwhile, mix cornstarch with a little water in a small bowl until you achieve a thick paste without any lumps. Remove from heat and stir in the remaining whole berries. Leave to cool to room temperature before assembling your dessert.
Step Two: Prepare the Yogurt or Cream:
If using whipped cream: Pour the chilled heavy/whipping cream, vanilla extract (affiliate link), and sugar into a tall mixing bowl. Using a hand mixer or a stand mixer with a whisk attachment, start whipping the cream on low speed. Gradually increase the speed until soft peaks form and the cream holds its shape. Store in the fridge until ready to use.
- For a light dessert, Just use plain yogurt on its own.
- For a lighter, fluffier texture: Mix the yogurt with the whipped cream in a 50:50 ratio.
- For a decadent, rich dessert: Mix the whipped cream with mascarpone (1:1 ratio) instead of yogurt.

Crumble up the Spekulatius cookies into small pieces. If you're serving the dessert in individual glasses, keep one cookie aside for decoration on top.

Now layer one tablespoon of Rote Grütze into each glass. Follow with a layer of the yogurt cream (or mascarpone cream). Recipe Variations:
- Substitute the Spekulatius cookies for Lebkuchen cookies, gingersnaps, or Biscoff cookies.
- Swap out the Rote Grütze for cherry compote. I used Rote Grütze because the red berry mix is more easily available abroad than sour cherries. If you don't like red berries, you can use applesauce or apple compote instead.
- Turn this into a low-fat dessert by using 0% fat yogurt.
- For vegans, you can use vegan gingersnap cookies and vegan yogurt instead.
- Adjust the amount of sugar used in the compote and yogurt according to your taste.

How to serve this dessert?
This dessert looks impressive with its three-tone layers of white, red, and brown, but it's easy to make.
I used 250ml (1 cup) glasses which made enough for 6 servings. Round tumbler glasses work best, but it's up to you.
You can also use a larger casserole dish, which will be easier to prepare for larger crowds.
Prepare Ahead
This is a great dessert to make a day ahead, freeing up time to prepare the actual main course and sides the next day. Store it overnight in the fridge covered with foil. But add the decorative Spekulatius cookie just before serving, so it doesn't get soggy.

Storing Leftovers:
In the unlikely case there are any leftovers, you can store them in the fridge and consume within three days. My top tip is to eat it with granola or muesli for breakfast the next day.

- 1 ¼ cups (300 ml) water
- ¼ cup (50 gr) sugar
- 3 tablespoon cornstarch
- 2 teaspoon vanilla extract
For the Yoghurt Layer Choose one Option
Option 1 Greek Yoghurt Only
- 2 lb (1 liter) Greek Yoghurt
- ¼ cup (50 gr) granulated sugar
- 1 teaspoon vanilla extract
Option 2: Yogurt + Cream
- 1 lb (500 gr) whippted cream or heavy cream. At least 30% fat
- 1 lb (500 gr) greek yogurt
- ¼ cup (50 gr) granulated sugar
- 1 teaspoon vanilla extract
Option 3: Mascapone + Cream
- 1 lb (500 gr) mascapone
- 1 lb (500 gr) whipped cream

Make the Rote Grütze (Red Berry Compote):
- In a medium saucepan, combine half of the mixed berries (about 9 oz/1¾ cups), sugar, and water. Bring to a boil over medium-high heat, then reduce heat and simmer for 5-7 minutes until the berries start to break down.1 lb mixed berries, 1 ¼ cups water, ¼ cup sugar
- In a small bowl, mix the cornstarch with 2-3 tablespoons of cold water to create a slurry. Slowly stir the slurry into the berry mixture.3 tablespoon cornstarch
- Continue cooking for 2-3 minutes, stirring constantly, until the compote thickens. Remove from heat and stir in the vanilla extract (affiliate link).2 teaspoon vanilla extract (affiliate link)
- Add the remaining fresh or frozen berries to the warm compote and gently stir to combine. This keeps some berry texture in the mix. Set aside to cool completely.
Prepare the Yoghurt Layer
