This German Spekulatius Dessert with homemade Rote Grütze (red berry compote) and yogurt is the ultimate last-minute Christmas Tiramisu - ready in just 15 minutes with no baking required! It's the perfect light and refreshing dessert after a big holiday meal, when nobody wants anything too heavy.

Crumbly spiced Spekulatius cookies are layered with creamy yogurt and tangy berry compote. As the cookies soften and mingle with the yogurt, warm flavors of cinnamon, cardamom, ginger, and cloves create a festive taste that is pure Christmas.

Here's why I love this recipe: I'm making it for Christmas dinner at my sister-in-law's house in England, and I won't arrive until Christmas Eve evening. With zero prep time and no oven needed, this Spekulatius tiramisu is my lifesaver for stress-free holiday entertaining.

The best part? It's incredibly versatile. Make it richer with cream and mascarpone, vegan with plant-based yogurt, or low-fat with 0% yogurt - everyone at your table can enjoy it!

How to make the Spekulatius Tiramisu Dessert

  • Spekulatius cookies - The star of the show! You can make them from scratch using this Spekulatius recipe, or save time with a store-bought package. If you can't find Spekulatius, substitute with gingersnap cookies, gingerbread cookies, or Lebkuchen cookies.
  • Yogurt layer - Use 100% Greek yogurt, or make a 50:50 mix of Greek yogurt and whipped cream. For a more decadent Spekulatius tiramisu, substitute the yogurt and mix the whipped cream with mascarpone in a 1:1 ratio.
  • Red berry compote - Super easy to make! All you need is 1 lb/500g frozen red fruit (like black forest fruit mix), cornstarch, granulated sugar, and water.

Spekulatius Dessert Recipe Steps:

Step one: Prepare the Rote Grütze (Red Berry Compote):

In a saucepan, combine most of the mixed berries, sugar, vanilla extract (affiliate link), and water. Bring to a boil and simmer for approximately 5 minutes until the fruit starts to fall apart. Meanwhile, mix cornstarch with a little water in a small bowl until you achieve a thick paste without any lumps. Remove from heat and stir in the remaining whole berries. Leave to cool to room temperature before assembling your dessert.

Step Two: Prepare the Yogurt or Cream:

If using whipped cream: Pour the chilled heavy/whipping cream, vanilla extract (affiliate link), and sugar into a tall mixing bowl. Using a hand mixer or a stand mixer with a whisk attachment, start whipping the cream on low speed. Gradually increase the speed until soft peaks form and the cream holds its shape. Store in the fridge until ready to use.

  • For a light dessert, Just use plain yogurt on its own.
  • For a lighter, fluffier texture: Mix the yogurt with the whipped cream in a 50:50 ratio.
  • For a decadent, rich dessert: Mix the whipped cream with mascarpone (1:1 ratio) instead of yogurt.

Step Three: Crumble the Spekulatius Cookies

Crumble up the Spekulatius cookies into small pieces. If you're serving the dessert in individual glasses, keep one cookie aside for decoration on top.

Step Four: Layer the Dessert

Now layer one tablespoon of Rote Grütze into each glass. Follow with a layer of the yogurt cream (or mascarpone cream). Next, add a layer of cookie crumbs, then another layer of cream, and finally top with a dollop of Rote Grütze. Decorate the dessert with a Spekulatius cookie and a sprinkle of cinnamon sugar. Refrigerate until ready to serve.

Alternatively: Use the same layering method if you'd rather prepare the dessert in a large casserole dish instead of individual glasses.

Recipe Variations:

  • Substitute the Spekulatius cookies for Lebkuchen cookies, gingersnaps, or Biscoff cookies.
  • Swap out the Rote Grütze for cherry compote. I used Rote Grütze because the red berry mix is more easily available abroad than sour cherries. If you don't like red berries, you can use applesauce or apple compote instead.
  • Turn this into a low-fat dessert by using 0% fat yogurt.
  • For vegans, you can use vegan gingersnap cookies and vegan yogurt instead.
  • Adjust the amount of sugar used in the compote and yogurt according to your taste.

How to serve this dessert?

This dessert looks impressive with its three-tone layers of white, red, and brown, but it's easy to make.

I used 250ml (1 cup) glasses which made enough for 6 servings. Round tumbler glasses work best, but it's up to you.

You can also use a larger casserole dish, which will be easier to prepare for larger crowds.

Prepare Ahead

This is a great dessert to make a day ahead, freeing up time to prepare the actual main course and sides the next day. Store it overnight in the fridge covered with foil. But add the decorative Spekulatius cookie just before serving, so it doesn't get soggy.

Storing Leftovers:

In the unlikely case there are any leftovers, you can store them in the fridge and consume within three days. My top tip is to eat it with granola or muesli for breakfast the next day.

Ingredients
 

For the Rote Grütze

  • 1 lb (500 gr) mixed berries frozen (such as raspberries, red currants, strawberries, or black forest fruit mix)
  • 1 ¼ cups (300 ml) water
  • ¼ cup (50 gr) sugar
  • 3 tablespoon cornstarch
  • 2 teaspoon vanilla extract

For the Yoghurt Layer Choose one Option

Option 1 Greek Yoghurt Only

  • 2 lb (1 liter) Greek Yoghurt
  • ¼ cup (50 gr) granulated sugar
  • 1 teaspoon vanilla extract

Option 2: Yogurt + Cream

  • 1 lb (500 gr) whippted cream or heavy cream. At least 30% fat
  • 1 lb (500 gr) greek yogurt
  • ¼ cup (50 gr) granulated sugar
  • 1 teaspoon vanilla extract

Option 3: Mascapone + Cream

  • 1 lb (500 gr) mascapone
  • 1 lb (500 gr) whipped cream
  • ¼ cup (50 gr) granulated sugar
  • 1 teaspoon vanilla extract

To assemble

  • 9 oz (250 g) Spekulatius Cookies shopbought or for the best flavour, make my homemade recipe

Instructions
 

Make the Rote Grütze (Red Berry Compote):

  • In a medium saucepan, combine half of the mixed berries (about 9 oz/1¾ cups), sugar, and water. Bring to a boil over medium-high heat, then reduce heat and simmer for 5-7 minutes until the berries start to break down.
    1 lb mixed berries, 1 ¼ cups water, ¼ cup sugar
  • In a small bowl, mix the cornstarch with 2-3 tablespoons of cold water to create a slurry. Slowly stir the slurry into the berry mixture.

  • Continue cooking for 2-3 minutes, stirring constantly, until the compote thickens. Remove from heat and stir in the vanilla extract (affiliate link).

  • Add the remaining fresh or frozen berries to the warm compote and gently stir to combine. This keeps some berry texture in the mix. Set aside to cool completely.

Prepare the Yoghurt Layer

  • If using whipped cream, whip the heavy cream with the sugar and vanilla extract (affiliate link) until stiff peaks form.

  • In a large bowl, gently fold the whipped cream into the Greek yogurt (or mascarpone) until smooth and well combined. If using Greek yogurt only (no whipped cream), simply mix the yogurt with the sugar and vanilla extract (affiliate link) until smooth.
    2 lb Greek Yoghurt, 1 lb greek yogurt, 1 lb mascapone

Assemble the Spekulatius Tiramisu:

  • Crush the Spekulatius cookies into coarse crumbs (you can use a food processor or place them in a ziplock bag and crush with a rolling pin (affiliate link))
    9 oz Spekulatius Cookies
  • In a serving dish or individual glasses, create layers: Start with a layer of crushed Spekulatius cookies, followed by a layer of the yogurt mixture, then a layer of the red berry compote. Repeat the layers until all ingredients are used, finishing with berries on top.
  • Refrigerate for at least 2 hours (or overnight) to allow the cookies to soften and the flavors to meld together.
  • Before serving, you can stick a whole Spekulatius cookie into each serving as a decorative garnish. Serve chilled.
