Easy Spekulatius Dessert | Christmas Tiramisu in 15 Mins
This easy German Spekulatius dessert layers spiced Christmas cookies with creamy yogurt and homemade red berry compote. Ready in just 15 minutes with no baking required, it's the perfect light, refreshing treat after a big holiday meal. Make it rich, vegan, or low-fat to suit everyone!
In a medium saucepan, combine half of the mixed berries (about 9 oz/1¾ cups), sugar, and water. Bring to a boil over medium-high heat, then reduce heat and simmer for 5-7 minutes until the berries start to break down.

In a small bowl, mix the cornstarch with 2-3 tablespoons of cold water to create a slurry. Slowly stir the slurry into the berry mixture.

Continue cooking for 2-3 minutes, stirring constantly, until the compote thickens. Remove from heat and stir in the vanilla extract.

Add the remaining fresh or frozen berries to the warm compote and gently stir to combine. This keeps some berry texture in the mix. Set aside to cool completely.
Prepare the Yoghurt Layer
If using whipped cream, whip the heavy cream with the sugar and vanilla extract until stiff peaks form.

In a large bowl, gently fold the whipped cream into the Greek yogurt (or mascarpone) until smooth and well combined. If using Greek yogurt only (no whipped cream), simply mix the yogurt with the sugar and vanilla extract until smooth.
Crush the Spekulatius cookies into coarse crumbs (you can use a food processor or place them in a ziplock bag and crush with a rolling pin)

In a serving dish or individual glasses, create layers: Start with a layer of crushed Spekulatius cookies, followed by a layer of the yogurt mixture, then a layer of the red berry compote. Repeat the layers until all ingredients are used, finishing with berries on top.
Refrigerate for at least 2 hours (or overnight) to allow the cookies to soften and the flavors to meld together.
Before serving, you can stick a whole Spekulatius cookie into each serving as a decorative garnish. Serve chilled.
