My Oma's classic Pfannkuchen recipe, thin, buttery German pancakes that are pure comfort food. Easier to make than you think and endlessly versatile. Serve sweet with apple sauce and cinnamon sugar, or savory with ham and cheese!
In a large bowl, whisk together the flour and milk until smooth with no lumps remaining.
200 g all-purpose flour, 250 ml milk
Add the eggs and whisk until fully combined.

Add the sugar, salt and sparkling water and mix until you have a smooth, even batter.
1 pinch sugar , 1 pinch salt , 60 ml sparkling water
Cover and refrigerate for at least 30 minutes. This allows the gluten to relax and gives the pancakes a better texture.
Heat a little butter in a non-stick frying pan over medium heat. Once the butter starts to sizzle, add a ladle of batter and swirl the pan to spread it evenly.

Cook for about 2 minutes until the bottom is golden, then flip and cook for a further 2 minutes on the other side.
Slide onto a plate, add more butter to the pan and repeat until all the batter is used up.
