carrots
9 oz ( about 5 large carrots)

apple

For the carrot salad dressing

tablespoon
sunflower oil
or any other plant based oil
2
tablespoon
cider vinegar
alternativley use white wine vinegar
1
tablespoon
fresh lemon juice
1
teaspoon
sugar
alternatively use an alternative sweetener such as honey or sugar replacement
To serve (optional)

fresh herbs
such as chives or parsley

tablespoon
seeds or nuts
such as sunflower or pumpkin seeds, walnuts or hazelnuts.
Instructions
Peel the carrots and remove the tops.
400 g carrots
Peel and core the apple.

Using a hand grater or a foodprocessor, shred the carrots into thin strips, ensuring they retain some texture. Repeat with the apple.
In a separate bowl, prepare the dressing by whisking together the sunflower oil, vinegar, lemon juice, andsugar until well combined.
2 tablespoon sunflower oil,
2 tablespoon cider vinegar,
1 tablespoon fresh lemon juice,
1 teaspoon sugar
Pour the dressing over the shredded carrots and apple, tossing gently to coat.
Season with salt and pepper to taste
Let the salad marinate for at least an hour to allow the flavors to blend.
Before serving, garnish with freshherbs such as parsley or chives (optional).For added texture and flavor, sprinkle with nuts, seeds, or raisins.
