A German one-dough streusel cake with a fresh, no-cook blueberry filling. The same shortcrust base does double duty as the crust and the streusel, no separate batter needed, made to celebrate blueberry season.
750gfresh blueberries (26.5 oz.) If using frozen blueberries: Use straight from the freezer (don't thaw), bump cornstarch to 4 tbsp, and add a few extra minutes to the bake.
Cream the butter and sugar together until light and fluffy. Mix in the egg and vanilla. Add the salt and flour and mix until you have a soft, smooth dough that isn't sticky.
150 g unsalted butter , 100 g granulated sugar , 1 egg, 1 tsp vanilla extract, 1 pinch salt , 300 g all purpose flour
Wrap and chill for 1 hour.
Preheat the oven to 180°C (350°F). Set aside about a quarter of the chilled dough for the streusel. Press the rest into a 24cm (9-inch) springform pan, building it up around the edges to form a rim about 5cm (2 inches) high.
Rinse and drain the blueberries. Toss with the sugar, lemon juice, zest, and cornstarch until every berry is coated. Pour straight into the crust, no cooking needed.
