This easy German Vanillesoße is a silky, pourable vanilla sauce made with just a handful of ingredients. It's the classic finishing touch for Rote Grütze, waffles, apple strudel, and so many other German desserts, ready in just 10 minutes.
In a small bowl, combine the cornstarch with 4 tablespoons of the milk. Mix until you achieve a smooth paste with no lumps.

Place the remaining milk, salt, and sugar into a saucepan.

Slice the vanilla pod open lengthwise and scrape out the pulp. Add both the pod and pulp to the milk mixture, or stir in the vanilla extract or vanilla sugar instead.

Bring the milk mixture to a boil, then remove the vanilla pod. Don't discard it; you can use it to make vanilla sugar.
While stirring continuously, pour in the starch-milk mixture. For a deeper golden color, stir in a pinch of turmeric here; it won't change the flavor, just the shade. Let it boil for a minute, then remove from the heat.

In a separate bowl, combine 6 tablespoons of the hot milk mixture with the egg yolks and mix well. This tempers the yolks so they don't scramble when added to the sauce. Pour this mixture into the rest of the sauce and stir until smooth.

Serve warm right away, or let it cool and refrigerate for a chilled version.
