German Red Wine Cake

Traditional German cake recipe flavoured with red wine, cinnamon and chocolate.

Equipment

  • hand or stand mixer
  • 20 cm gugelhupf baking form (optional)
  • 30 cm x 13 x 8cm loaf form (optional)

Ingredients

To decorate

  • 100 gr pack of dark chocolate glaze optional or
  • icing sugar optional or
  • 2 tablespoon red wine

Instructions

  • Preheat the oven to 160 °C or 320°F
  • Grease your cake form with some butter and a handful breadcrumbs (optional)
  • Using a hand or stand mixer whisk the egg whites with a pinch of salt until you achieve some stiff peaks.

  • In a separate bowl add caster sugar, vanilla sugar or extract, egg yolks and butter and mix until you achieve a nice creamy consistency.
  • Add the cocoa powder, chocolate chips and cinnamon to the bowl and combine everything to a homogenous mass.
  • Mix the flour and baking powder. Little by little add the red wine and flour to the cake batter, alternating between the two. Mix until everything is combined.
  • Lastly, carefully fold the egg whites into the batter.
  • Pour the dough into the prepared cake tin and place the tin into the oven.
  • The red wine cake has to bake for about 60 min. Check after an hour with a knife or skewer if the cake is done. If the knife/ skewer comes out clean it is done.
  • Leave the cake to cool before serving it on a platter.
  • You can decorate the cake by glazing it with a chocolate glaze or you can dust it with icing sugar. To make the red wine glaze mix 100 gr (1 cup) icing sugar with 2 tablespoon red wine to a thick mass and pour over the cake.

Notes

There are several ways you can substitute the red wine in this cake recipe. Although you will miss out on the flavour, it does not 100% taste the same.  Use the same quantity described in the recipe and substitute with 
  • Non-alcoholic red wine 
  • A little grape juice mixed with a little lemon
  • Juice of sour cherries
  • Apple juice mixed with a little lemon.
 
The cake will keep in an airtight container for up to 5 days. It also freezes very well, up to three months.
