Bibinka - Filipino Coconut Cake Recipe
A traditional rice cake from the Phillippines.
Prep Time 10 minutes minutes Total Time 1 hour hour 10 minutes minutes
- 3 eggs beaten
- 200 g brown sugar 1cup
- 400 g glutinous rice flour 2 cups
- 3 tablespoon butter unsalted and melted
- 1 tablespoon baking powder
- 400 ml coconut milk 13 ½ oz can
- 3 tablespoon desecrated coconut flakes
In a bowl mix the eggs, brown sugar, rice flour, butter and coconut until you achieve an even thick paste.
Preheat the oven to 160 degrees (325 Fahrenheit).
Lightly grease a pan with butter and pour in the mixture.
Bake for about an hour.
To test if the cake is done prick a fork or a toothpick into the middle and it should come out clean.
Before serving sprinkle with coconut flakes
